Have you checked out Scrivener? It’s pretty much the standard, and everyone seems to love it. Definitely worth a look.

If not Scrivener, how about:

• FocusWriter
• CeltX
• Storybook
• yWriter
• StoryMill

All of these have organizational tools and a space in which to write.
